You can plug the old theme back in from a previous version.
resources\app\resources\bitmaps\ui

If you want to experiment you can just plug in the individual parts that you like.
I haven't tested it but you could probably throw in the entire folder and just replace when prompted and it should work in theory

Shitty wooden background aside the new UI isn't too bad, though it will definitely take some time getting used to.
Still, would it have killed them to include a "classic" option for those who might have preferred the old look?
