I know it's relatively new, but is there any downside to becoming a Valkryie? It's kinda funny though. My character has quite a bit of corruption, due to wanting to wield the Girthy Rod and later on the Corrupted Dawnsword. But it looks like I can join them anyway.

Except they make every excuse possible to not change Ryn.
Meanwhile Brint, and Berwynn, and Liulfr can both be completely transformed to the opposite sex.
If they were remotely consistent it would be fine, but they simply aren't.

All lost scene in your companion is count as NTR (Except for Cait because she's on different spectrum). However it should be note that even lost scene is get consent by you, your companion, and enemies. Implication of rape, blackmail, etc is big NO NO ON PATREON.
Interestingly, there's Azzy infamous dragon scene, the corrupted bakery scene, and Rindo scene where you reject her engagement (She later marry other guy, have kids, and you can still have sex with her). All of them subtle

This is Corruption of Champions, the gender transforming magic can only be applied to male NPCs that work better as male and don't want to be genderbent, like Brint, everyone else is off limits, OBVIOUSLY.
I'm trans, and the answer is: Yes, anyone that wouldn't is literally just posturing to get attention, and people that get triggered about it are actually just stupid and don't understand anything, which is why I hate Etheryn and how casually Brint is forced to have his sex changed.
Because Ryn (or more accurately her writer Savin) doesn't want to change her gender. That's it, that's the end of the discussion. The person writing the character has said the character doesn't want to change gender. You can complain and use other examples in the setting till the cows come home but at the end of the day the person writing Ryn doesn't want her to be trans, so she isn't trans.
Kind of depends on what you're looking for, you can play as an effeminate male character and be dominated by a variety of other characters but you won't find much of the standard progression of sissification games. Similarly you can establish relationships with various characters and then see said characters having sex with others, technically NTR but outside of a couple scenes it has none of the hallmarks of NTR, no slow emotional build up into betrayal, no focus on loss or deception, sex is just very free in this setting.
TLDR: If you can't stand them you'll find enough to hate but if they're all you're here for you'll probably be left unsatisfied.

In reference to NTR if you mean in regards to actual NTR, there's not any. Wait no that's not true, there's I guess the minotaur captain bad end depending on companions, the hobgoblins loss in the cave depending on companions, and the baker. There's also that voyeur scene but that's more classified as the porn definition of 'cuckoldry' instead.
Anyways, if you mean in the way that people use the term on this website, a metric fuckton. If you're not into sharing this ain't it chief. Only a very small percentage of the repeatable unique characters (12% IIRC) in this game aren't living their lives in a forever orgy.

No but for real, Brienne would have only been better if the sex change had been more gradual. Granted, don't mean in the physical sense but rather in the mental one. Slowly easing her into the role like it's a trainer game would have been quite hot, and possibly opened the doors to corruption route too (still no ntr obv but less wholesome and more hentai focused, like her demon self from the dreams).
