Blame Cosy for Rachel. Or don't, she'll turn out fine in the end. I'm almost positive you're describing Elizabeth and if so, she's going to a be a side LI per Cosy as well. I take it to mean you won't marry her but still get to fuck her.
For Rachel, it's her upbringing. She was raised a certain way and had certain ideas drilled into her, brings that to school, obviously doesn't win her any friends so she's stuck in her ways. While I speculate it will be one of the more drawn out storylines, Rachel will eventually come around once she gets her brain unscrambled by watching how the MC treats his women. I don't think she'll ever be super popular though.
I just can't see it happening for me or a lot of people, Sara was at least willing to help when Lucy asked her, and you do end up feeling sorry for her being stabbed in the back by either one or both parents, and then add in the body image problems, and Cat at least you could see she clarely does not hate us, add to that his update where you see how caring she is for her sisters, so at least they were showed as at least somewhat redeemable, but Rachel, just no.
I think you got it backwards: sexy times were already a possibility when she got teased, it's her part in the story that's changed/changing. At least according to these here timelined posts by the legend themselves:
