Well I'm not a developer so it's not like I have a preference. If you ask this because you are consider what to use, then I'd suggest asking someone who has some experience developing (so not me).
That being said, I do know that Unity is very popular, so it's probably good.

I'm not a dev, but I DO know I've seen many games made in Unity that manages to be quite impressive.

The recent Battletoads comes to mind, for example.

Also, Wasteland 3, Outer Wilds, Two Point Hospital, Might and Magic 10, DUSK, Pillars of Eternity and even Pokémon Go.

I assume it's more sophisticated than Source because it seems to be updated more frequently, but like I said, I'm not a dev.

May I ask you with some assistance on making this thing run on Linux. I have successfully installed the "Unity Hub" and used an "Install" feature to download and install latest beta. I'm not sure how to proceed further, to open one of the CyberCaptain's game projects.

Not sure its possible. CyberCaptain's "games" are compiled builds (".exe") for Windows, they are not raw game projects which can be opened in editor. But You can use installed editor to create your own game ;)

Anyone know how to get this in a windowed mode ?.

not possible to adjust resolution when dealing with a ultrawidescreen.
