'Journal' would be best used to track quests, and some important stats like Kingdom's overall rating and tutorials/explanations how things work. Putting too many things under it would just repeat the problem of UI clutter.
If anything could be of a consideration, the current servant/slave page needs a total overhaul.
First, each servant/slave needs their own page. Putting a list of name on the left side of the screen along with their mood is a good idea, but putting ALL interactions on the right side was not. Maybe change it so when you selected someone, it will enter a new screen with their image on the left screen, complete with their current equipment and the button to change it on the lower side. Move the rank/class/upbringing/freedom status to the top of the left screen, and...

About the job/sleep/wage/food assignments however, it's best to make them in a separate menu from the servant selection. Maybe combine them with the still-mostly-empty supplies purchase menu and call it the 'Assignments' menu. Since the servant menu has been separated, you only need to list their names and the four Occupation/Wages/Sleeping Conditions/Food selection menus, along with a short explanation on the lower side of what does each selection does. For example, 'Domestic Servant: will clean the Castle. Higher Obedience and Happiness contribute more to Castle Cleanliness gain per day'. 'Hunter: will procure Supplies per day. Has low chance of becoming injured' and so on for the other 3 menus. Of course, if you wanted more variations then it's a bit more work, like coding different responses to different treatments related to their temperament or fetish.
Example again, Succubuses doesn't need wages and food but can only work in the brothels. Lizardmans or Ogres can only work as soldiers, and can only sleep on the ground, but needs to eat fresh food otherwise they will run away. More intricate interactions can also be introduced, like Masochists will be very happy to receive leftovers, but sadists will not.
