How much manual editing do you do to filter out weird hands and the likes?
So for hands there's a few things I do.
If I can be lazy and find a picture of a hand in the exact position I want online (or close enough) I'll grab that, and photoshop it into my image (usually requires a lot of blending and coloring). Bonus points if I can find an anime picture with a hand that I want. If I can't then I'll use a picture of my own hand, or preferably my wifes hands since hers are more feminine than mine and require less editing. If I can find anime hands, it requires less blending / editing but honestly its extremely hard to find images with hands in the position I need most of the time.

Which I will sometimes use and manually color them myself in photoshop.
Ironically, I never noticed how badly drawn hands frequently are in anime / manga until I started doing this myself. I find myself paying attention a lot now when I read manga and noticing how badly drawn some are.
For other things, it depends on what I'm trying to do. Horns / wings I have to do manually every single time or else you'd end up with different horns for every single image.
Outfits usually require me to "fix" sections, or re-draw sections then have AI do another pass over on my re-drawn sections. Or just do it entirely in photoshop myself.
Penises usually come out wonky and I pretty much always have to photoshop those. ESPECIALLY if I need to add one to a slime, then it requires more photoshop to make it match the body.
Weapons are always manually done, AI can't figure out how to make weapons, or if it does it makes...honestly some of the dumbest looking weapons I've ever seen.
I used to redraw vagina's, but honestly AI has gotten a lot better at it and now I don't have to do them as often.
Hair colors...So there SHOULD be a way to change hair color with AI, but when I try it changes too much of the rest of the image or does very low quality hair.
I've opted to just recolor the hair in photoshop myself, which can be a pain in the ass and take me nearly an entire day to do all 7 hair colors for a single image.
Feet usually require me to fix them.
Sometimes I'll get 1 leg, and another leg with weird nipples or something wonky about it. Sometimes I'll just copy the one leg, cover up the wonky leg with the good one and redraw small sections until I get it working.
Action scenes and sex scenes are the worst, requiring massive amounts of edits.

Just getting this was incredibly hard to do.
Now if I choose to use this for an action scene, I will need to remove the sword, generate or find a picture of a cave background and replace the current background.
Completely replace that enemy with the enemy I need (in my current case, I need a demon. A demon I already created manually because AI doesn't like demons for some reason), replace the arm sticking out with claws...
Which means I need to edit in my demon and manually recreate him sections at a time. Copying portions of the image from the old image and popping it into this one, then have AI do a pass over it in small pieces at a time (so I might do a bicep, then an arm at an awkward angle to force it to do an elbow). Doing that can help me fix arms at awkward angles.
There's also something new I've been doing to try and create my own monsters.
I'll draw my own monsters, then I'll add the sketch to AI and have it turn those sketchings into much better looking art. Usually still requires a lot of edits, so a single monster will still take me several hours.
