Anyone know if all his renders are originally done and finished on 30fps? It seems like all his 720/1080 are only in 30fps and then there's a single 4k 60fps version. This leads me to believe that the 60fps is a post "interpolated" version.

The 4k 60fps is a more recent thing and is used to justify subscribing to Tier 3 on his Patreon (among other things like VR and polls). Previously, it was 1080p 30fps.

The animations are rendered at 60 FPS, not interpolated. Which is why the file sizes are so large

I'm confused. How has the content this artist has made that's on the, imo, 'Too young' side been removed but artists that make similar stuff like Beyern3D still have theirs available to download?

It's just arbitrary removal mostly because of Patreon and its ridiculous policies. So long as creators continue to use it, and they will because it's the largest funding platform, you kind of live or die at its whim.

Their only real choice to get paid big is Patreon, Fanbox is even more stricter and don't care shutting big creators down while Subscribestar hates 75%-90% of all the credit cards on the planet. Unifans pays creators in crypto from what I've heard so if you don't have it you won't get paid. Fantia and Ci-en/DLsite are non-options for foreigners and only accept Japanese cards at this point while also being equally strict like Fanbox.
