For better or worse, the game is a slow burn. Especially for the first say third to half of ep 2. Once the action picks up it doesn't stop though. From your initial expectations and wants, you sound like someone (like me) who would really enjoy the game.
As for how long the game is, I couldn't say other than it will take days to get though all the current content. Fucking long might be the best way to describe the length.

Well, 26,123 renders in superb quality and 779 delicious video clips are no joke (Ep3 v14 Extra). That's about how many gigabytes this treasure chest should weigh. Fashion Business is really huge and most other adult games can only dream of it.

All those physical changes are kind of against Monica's character, maybe except the hair color. I mean she perceives herself perfect and so she doesn't need any "upgrades". She is "the most beautiful woman in the city" after all. More than that other characters seem to agree with her.
Bigger boobs, lips and so on are usually for those unsecure characters from those stories where a shy girl becomes a slut or a bimbo.
With regard to blonde hair... I think it is possible for some events, for example for the promised plot where Monica becomes an adult actress. Monica needs a lot of money to pay to that hag at the hotel, so she is persuaded to participate in a porno movie. In order not be recognized she changes her hair color for the shooting, maybe something else. It might be cool, actually.

She would look much better if I edited it in Photoshop instead of an online app and changed the color of the eyebrows and the make-up. But I'm too lazy to bother.)
This only works if everyone is a little stupid.
Your face is your identity so just changing the hair color is still you. If someone truly wants to be not recognized they change their face. I think this is where the story falls a little short because it appears that everyone has some form of amnesia or face blind.

Here she changed her hair color, make-up and put in contact lenses (to improve the result she should change her hair style, but it's beyond my editing skills). I wouldn't say she is not recognizable at all, but it's good enough considering it is not supposed to be completely realistic since it's a porno game.
Let's say she decided to participate in porn looking like that because she doesn't want to be recognized. It is reasonable enough, in my opinion. Certainly more believable than all that twin idea.
