An ending with Stacy and AmRose is not at all "off the table". If (in the scene after the 5 some) you chose the first option here:

Then after a long discussion AmRose agrees to participate (as President with veto rights) and you get Ending #09 Fetish Locator Rebooted which in this version ends like this:

This looks very much like a "polyamory"relation with Stacy and AmRose to be developed in the next update..

I would have loved a polyamory relation with Stacy, AmRose AND Lyssa.

well if you cant launch the game usually only one thing to do - delete “persistent” from both places “\game\saves\” and “AppData\Roaming\RenPy” (or equivalent if you are on other system). That usually solves any launch issues.

Dunno, all of Week 3 has no impact for me *shrug* Kinda obvious problem with games that try to sell you the "MC loves this girl" crap while the girl is the least interesting and attractive of all of them. Never liked Lydia so kinda just don't care

Same, Lydia was not important for me. I never care about her and the reveal was like... "I see, so that was the ntr cage for."
