Beating Iroh's crabs several times should unlock the option, but don't quote me on that.
Do you happen to know how many times I would have to beat him? Or if they are some sort of commands to make beating him easier?

I love this game. The only thing I wish is that the MC wasn't such a douche bag.
Even in the love routes he has a personality that is hard for me to like. At least if there was a choice to input different types of personalities into him, it'd be okay to me.

Morality affects your ending scene. Freeing cows gives you positive moral but you can make less money (obviously).
If you beat Iroh in all crab battles you should have unlocked Ty Lee's ??? scene in the brothel. You can unlock the shop upgrade after some progression with the main story. It's better to do the tavern upgrade and it's corresponding quests first as this will give you additional obsidian. If you killed the crab in Sokka's hiding place there is nothing more to do there (the fight unlocks an additional pornlove picture though).

Unless you are on the love route. It does absolutly nothing there if I remember correctly
