But for some reason, I'm just going to gamble that she's either not as happy as she lets on, or she's got a reckless and self-destructive side to her that Cole doesn't know about. If it does indeed happen like this, she'll feel unbearably guilty for sure, though; it fits her character and it believably nips the mess of yet another route in the bud.

Didn't Ashe's dad hurt his back falling on the job? I can see that as the opening to get to Bonnie. Like Cole has mounting medical bills and he's too stubborn to ask for help/doesn't want to worry Ashe but Bonnie comes to the mc for help since she knows he runs a charity. This is where the mc can either offer to hire Cole to remodel his new restaurant to help them on the romance/friend route. Or the mc can offer the money if Bonnie sleeps with him. In order to keep the fact that Bonnie is sleeping with the mc for the money a secret he can also hire her to manage the restaurant since Trevor is shady. This could also extend to the corruption of Pepper in the restaurant as well as scenes involving both of them at work.
The only problem with this is that Neon said the scene with Bonnie would be a one time thing, so hiring her for something ongoing makes no sense. I do agree that it being related to money is a good possibility though, that makes more sense to me than her just simply being unhappy or having a secret wild side. I have no idea how it will be handled but, blackmail or her selling herself to solve money problems are definitely the top 2 likely ways for me currently.
If its just a one shot then the mc can say he needs her as a manager temporarily until he can find a permanent manager for a grand reopening. Or if hiring her for any length of time is too burdensome for the story he can say Bonnie did some work for him of either finding who was stealing from the restaurant, some help with his charity or even that he paid her to help when he gives his donation to Wren.
