I do and then, when I react to her though, they change how they attack anyway. Not to mention the ''you cant see what i do anymore'' attack. and then the fucking human goblin thing ONESHOTS me.

I do not know if this changes throughout the game as i did not complete it yet.
But as far as i can tell the correct choices for regular enemies are as follows
What's it trying to do - 1st option
Keeping distance - 2nd option
Excited - 3rd option
And when she says they are regretting it i believe the correct option is to cycle to next attack as in if previously it was 1 go for 2 etc, with 3 looping back to 1. Take this with a grain of salt, as i cannot confirm this is exactly how this part works but it worked for me so far.
For the boss that says she cannot see what they are doing. If memory serves they are just going in reverse order of actions

On keyboard esc and x keys will open the menu, or if you are using a mouse you can click top right corner of the screen.

Close, but no cigar! You need to extract the game before opening it because the saves don't work otherwise.
