Yeah, it gets a little confusing after it gets mixed, but what I said is 100% accurate.
You're absolutely correct. Cat & MC's child would be first cousin once removed to each of them.

As Cat is a first cousin, so is her child, but that's where "once removed" comes in. It denotes a difference of one generation, up or down.
So your first cousin's child is your first cousin once removed. As is your parent's first cousin.

Any kids with Amy will be both first (through Amy) & first once removed (through MC) cousins to Cat.
They will also be first cousins (through Amy) to MC, as well as his children.

Second cousins is the relationship between the children of first cousins.
So when Cat has kids with MC, they will be second cousins to MC's children with someone else.
Meaning Liz's kids with MC will be second cousins + Aunt\Uncle to Cat's kids, as well as half-sibling to Cat.

Is Nana the Mother of Liz & Amy? If so then this one's not too difficult.
Nana's child would be half-sibling to Liz & Amy, half-Aunt\Uncle to Cat, so Great (half-)Aunt\Uncle + second cousins to Cat's kid, as well as half-sibling through MC.

So, yes it can take a while before something more happen between Aunt Amy and MC. The same thing is true about it's possible it will take like just another update. We don't know what Moonbox wants to do, we just go with the flow and we are totally for it!

As she's "more shy than her sister" it really wouldn't make any sense whatsoever for her to jump into bed with her nephew before Liz, the sexually open one.
Shy girls generally don't put out as fast as girls who've embraced their sexuality.
She's coming to terms with the fact that she's developing\got feelings for MC. Current update has them making some steady progress towards the inevitable bumping uglies.

Also I'll add this, I don't know if Sherengroth read the dialogue of he's there just for the sex scene, but Amy is not only coming to terms with the fact that she loves the MC romantically, but also that for a long time, she wasn't comfortable with men because of what happened in the past. She said a lot of time that she's only at ease with MC, so basically, her whole story is that it's a LOT to take for her, more or less at the same time.

It's make total sense that Amy was meant to be the last of the family to realize she loves the MC in that way and she also has desire for him too.

I can't remember now, but did something happen to her when she was on one of her modelling trips around the world, that made her distrusting towards most men?
It might not have been something specific, more general treatment of her by men who treated her like a prize, therefore an object to display?
Wouldn't be unusual for highly attractive & sought after women, especially globally famous models.

It was before that, she was harassed by a man but that's how she met her future boss who beat the shit out of that man with a flying shoe.

That even shook her more than she realize at first and over time she was happy with her job but wanted to spend more time with her family but she realize that while she was okay being single at first, she wasn't anymore but she don't trust anybody but her little man. That's why in the shopping trip between her, Liz and MC, Liz teased her saying she LOVES MC, and she said something like: "Holy shit! That's right, he's the only man I love, but not this way Liz!"

Yes, during the date if I remember correctly. That's also one of the main reason she wanted to retire soon after that.
