Forgive my schoolboy level German, but should this not be "Sprichst du Deutsch"?
I remember the more formal "Sprechen sie Deutsch" from school lessons, but for some reason I'm thinking that "Sprichst du" is more correct than "Du sprichst"?

Ha ha, yeah but to be fair, most are. Olde English + Norse + French + German = English.
I have to admit, I'd hate to learn English as a foreign language, the multiple pronunciations for many words must be confusing as hell.
e.g. Take "ough": Bough (ow), Thorough (uh), Cough (off), Through (oo), Dough (o), Enough (uff), Thought (awt)...
Must be a nightmare!

It doesn't even depend on the situation, both are correct and mean exactly the same thing.

This doesn't happen often in German, where a single comma can change the meaning completely, but here it really doesn't matter.

No that is also correct. "Du sprichst Deutsch?" is "You speak German?" and "Sprichst du Deutsch?" would be "Do you speak German?" both can be used depending on the Situation.

"Du sprichst Deutsch?" "You speak German?" is also a question, but here the person asking is surprised that the other person speaks German

Unfortunately, there are two forms in German:
"Sprichst du Deutsch?" is the personal form
"Sprechen sie Deutsch?" is the polite form

in English mean this the same: "Do you speak German?"
