I would guess there will be more added, though I have no idea how much, because Runey typically adds to each version of the beta. If you want everything for the update, wait until the public release.

Not odd if you dig around and find out the whole story for why it's taken this long.
TLDR: death in the family, legal stuff surrounding it, sick, moved continents, vacation. Whether or not you support those reasons as valid for the length of developed content is up to you.

i have a small issue with the newest version, when I have the final quest of kate it'll just give me a bunch of errors and after that the game is just borked, wont do anything anymore
Yeah thats kinda what happens when you run a beta version thats not complete.

It's got bugs, some that you might not notice until later, that will break your game. Playing the new content is almost certain to break stuff. Don't overwrite your saves, at best you will need to redo the new content once it's complete.
What file should i back up if i ever uninstall and install the game again but i still can continue where i left off, is backing up ren'py saves folder enough?

the one located in roaming should be the one you want to backup.
"C:\Users\Yournamehere\AppData\Roaming\RenPy"
Yes, the saves folder is all you need, unless you have screen shots or something.
You will likely need to start over again then when it comes out, or like we said before, go to his Patreon or Itch page and get the official release. There were a couple of bugs in that one, but we can fix those.
