I have read about the poly stuff and have a question: is this a "harem" style where you are the only one doing stuff with the love interests or is it so that they have relationships and do stuff without the mc?

The two available in the free demo imply they wouldn't be with other people, but have in the past been together. So... I think it will be a mixed bag with some player choice involved.

That's what I've been trying to do, the only sex scenes that seems unavoidable is the blowjob at the beginning and the footjob from the restaurant.

You are doing something wrong to avoid the blowjob, you only order a normal coffee so you avoid spilling the coffee on the restaurant, do not look at the waitress, just tell her yes, in the normal conversation, I recommend activating the nsfw mode, which has drawings of eggplants that helps you know which one.
