Well there's no list currently, a user on the discord named Cap made some mod characters. I added them to the online version, offline players can download this:

Talia's first appearance is in the shopping district, Zara only appears after a certain point in Jacqueline's story.
Some people have had bugs and they may keep adding on to their character roster, I think that'd be neat. There's a number of things that make modding this game difficult, like my evolving spaghetti code, javascript's inability to look in the game folder, and the need for transparent elements like in the logbook. Still, I hope there'll be more mods in the future. They're more likely to be posted in the discord though in case I can help them out with anything they need.

That outlines the general workflow, but with newer tools it's even easier. Honestly, it's pretty impossible for me to keep up with how fast AI models come out for me to keep all my guides up to date, but here's an older guide that goes step by step in installing:

It's based off a checkpoint called an Illustrious model, so we call it an Illustrious Checkpoint. As compared to PrefectPony from the guide, which is a Pony Diffusion Checkpoint. The differences, thankfully, are very minor, aside from LoRa models made for one not playing nicely with the other.
The biggest issue you'll face is getting the uncensored material to visually match, it's something I found hard when trying to decensor the gyarus and some of the Silver Radish sets, it's easier to create new stuff generally than it is to try and style-match older things.
As for transparency, I use a tool called RemBG, specifically the isnet-anime model. I was having a lot of trouble recently that it wasn't running, but I fixed that by running it via a python script instead of through the command line.
It's not perfect, and may fail to erase bits (especially in the small corners between hair strands), and may erase unintentional bits like the whites of eyes and hats, but overall it's a lot faster for me than a magic wand tool. It's overzealous, but against dark backgrounds that white pixel outline is thankfully (mostly) removed.
It definitely is taxing to add the mini-games, thankfully Syrup Town is a good sandbox to play around with ideas in. I can prototype ideas faster in there since the engine is newer, like the digging minigame from the gen 4 pokemon games, or even trying out RTS mechanics.
Then I can re-use those elements for future projects, like how I re-used the card code from HU for a bunch of syrup-town things.
I do think it's strange that not as many creators target the gay/femboy lover audience as much as I do, surely it's not that niche... And by femdom do you mean futadom? I'm only just now dabbling with femdom in Syrup Town, I can't think of any hentai university girls who dom you.
And no worries about necro-ing, if I'm busy I'll just leave the post for responding to later. I'll come back to university at some point, though that'll probably be for some final update where I wrap up everything I want finished. Ideally it'll have slacker finish his volleyball girls, that'd be a great sendoff to my longest-running game.
