Missing: Finish conquering Sera, Erin's feminization (optional), more content with Elena, probably more npcs and things that only the dev knows...
So I would say that it takes time for it to be finished.

I mean lore wise we know that beastfolk exist and that humans mated with them so weird traits got added into the gene pool, for example Elena, Elena is half beastfolk, her red/orange hair is not a human trait, its her beastfolk dna. I dont remember if Nitro said Elena mother was a beastfolk or her granmother, but Elena is part beastfolk. Also the reason we dont see them, is because they are legit retarded as animals, they are either slaves or too dumb to coexist with people

skin tone is made that way do to lore and story. Mars skin tone is gonna be an important part of the story in a future beach event update

I wonder if there'll be different "harem" endings like, instead of everyone, only Elena and Erin, or Sera and Cecille, or Elena and Sera, or Elena, Sera and Erin, etc. Because I get the feeling the harem ending will be just Cecille being the madame and the rest bitches in heat and it kind of kills a lot of potential dynamics there.
I doubt that the author is going to implement every outcome you are proposing. However, I really hope there will be some choice in the matter. At this point there is just so much potential in this game.

It's definitely feasible to edit the art assets to do so but obviously would be a lot of work.
Unlikely that anyone ever does it but I do wish someone would at least make a mod to normalize his skin color since depending on the scene Mars' has white, tan or black skin.
Elena being part beastfolk? I'll admit it's been a while since I've played through Elena's content, mostly because starting a new game feels like such a hassle, but I don't remember anything mentioning Elena having beastfolk ancestry. Could you show me where it said that?
Uh Mars mentions beastfolk iirc, but this one was mentioned in the discord server. I do recommend people to join and read the spoiler channel, we got A LOT of lore from there, most of it comes from people asking stuff and the dev answering them
