Playing the game so much again got me wondering. Would be possible for any underwater scenes like snorkeling? Not sure what limits it may pose. Even though 2.1.1 just dropped, I am already hungry for more.

Technically speaking underwater scenes tend to not come out well unless major work/postwork is done, which is labour and time intensive.
Also anything with water and reflections routinely takes up to 10x the time to render, which is to say 30 - 60 or even 90 minutes depending on what is attempted (even on major hardware rigs).
The final product will therefore easily, with proper postwork and corrections, take up to 2 hours, sometimes much more.
Even that is by the time everything else works (lighting, scene, effects, environment) so there is a large initial setup cost.
Compare that to a normal and reliable render, say any indoor render with a girl in it
It has a total production time including any fixing and postwork of 15 mins (on average).
But should the artist have the skill, time and critically the wish to do so, then there is not a technical barrier preventing it.
Edit : numbers are estimates and based on HI quality, doing something on the cheap would have other numbers, but not really be HI.
