Dream sequences in porn games are such a fucking waste of time. Just render a real porn scene that's actually happening to the characters. Why does anyone think dream sequences are at all hot in these games?

This is actually the replay gallery. You can choose to "dream" when you go to sleep and replay something you've already seen.

Hate to break it to you, but wasting time is kind of the entire point. These games are pastimes, ways to pass the time unproductively. Entertaining ways to waste time. Porn games just add to the usual by also potentially wasting tissue paper.
However, dream scenes often serve a purpose. Sometimes it is simply to provide some sexy scenes at a time when it wouldn't be logical or consistent with the story to have an actual sex scene. Effectively, fan service. In this game however, dream scenes are the mechanism for the replay gallery.
How much of the game am I missing by disabling NTR? Is it a main focus or just something that happens once or twice?

No, they're a waste of story time that bog down the pace of the story with events that don't matter. Like filler episodes in anime, but worse. Fill the story with meaningful events that move the story forward at a decent pace. We already know that entertainment, by its very nature, is a "waste of time" - though that could open up an interesting discussion about how boredom can drive a person nuts.

Any chance of a walkthrough mod? The game being sandbox makes following the out-of-game walkthrough difficult at best and impossible at worst

NTR is a major focus of the game if it is enabled. The game will start with NTR, and their will be regular, repeating NTR events that seek to corrupt all the housemates, all of the time.
Probably about a 50/50. Haven't counted the scenes but with what was in and how the changelogs have been lately probably a fairly safe guess.
For what it's worth though last time I checked them not all, but most of the NTR scenes are just a single angle of a single animation and maybe an extra few renders. The MC scenes overall get a lot more work into them as I remember it.
With only a few exceptions, and a few avoidable scenes that don't actually work with the toggle, it really isn't in your face though. Game's worth playing for vanilla players as long as you like the models, just maybe not worth playing every single update.

Not really, no.
The way the game is structured, as an open world with potentially thousands of different situations, positions, etc the MC could choose to be, the existing built-in system is about as good as it can get. A walkthrough needs to know what you want to achieve in order to tell you how to get there, while in this game there's a huge cast you may choose to pursue or not, to watch get corrupted, or not, and that all means a simple walkthrough just isn't possible.
