I think it can be done, Nyx just needs to figure out how Erynn vs Layla interact... it wasn't in her original plans and apparently even after she allowed it happen she never took the time to figure this one out.

I think we just need a couple of scenes of them being suspicious of something, for example there's scene where Erynn sees Layla's panties from training camp, maybe make her more inquisitive and jealous in this scene, asking about who's panties this is.
You also straight up tell Erynn that you are going to Layla for a hot tub party, another good opportunity for jealousy... and for Erynn to stand her ground.
Similar things for Layla when she sees Erynn driving you to school, she can show a little worry about something going on between you 2.
You can involve Alexis too, since she is the connective tissue, Erynn's friend and Layla's sister, she can be the person who first figures out you are up to no good.

Add a couple of cut off points for both relationships... and if you don't take those... you get caught and punished.

Hasn't she already said she wants to go back to the original plan? If you go home with Layla, you'll cut off Erynn's route; if you stay with Erynn, you'll cut off Layla's route.

I would love for Erynn working at the school to be the final destination of these issues.

Hasn't she already said she wants to go back to the original plan? If you go home with Layla, you'll cut off Erynn's route; if you stay with Erynn, you'll cut off Layla's route.

Nyx mentioned she was considering going back to this system, she didn't say her final decision, it was just under consideration.
I still think it's a bad design to push this decision at that point.

And a later confrontation could be quite entertaining

That was our original thinking as to where Nyx was going. But it turned out that Nyx "forgot" that you can date Layla and Erynn at the same time without any consequences. That's why she said about making the "Go with Layla" or "Stay with Erynn" early option be a romance on or off option for them both.

But you can have Alexis dressing down the MC in a "i know what you are up to" scene.
"If you keep playing with my sister and BFF i will fucking ruin you".

From there you can make a choice between Erynn and Layla... or test Alexis... to ugly consequences.

Based on my reading of Ximena's character, she would take the lead in that threesome.

You can add a random scene where she comes and says "i know what you are up to" and gives you a warning.
It's not that hard to make up stuff for Layla vs Erynn, Nyx just needs to want to do it.

She can either create something or cut it off completely, i think creating is better than cutting.

And yes, it's an extremely poor spot to put that choice in... i think it shows about Nyx being wet behind the ears when she made this decision.
We are having to chose between the girl we have been flirting for the last 40 minutes and someone we haven't even met yet.
She put a choice to end things with Erynn before even introducing her properly...

I think inside her head Nyx already had plans for Erynn and why she would be this great character that many players would get feelings for... but we as players don't live inside Nyx's head and have to make a decision NOW, before we properly meet her.

She's quite "sticky", low points requirement and not many options to get out afterwards(and they are all conditional), you have to be VERY DELIBERATE to avoid her.

But in this game I chuckled right at the beginning when if MC choses to ignore Alexis and checks out the stewardess she pushes him into the lavatory and says : I can work with this, like it was the bare minimum for her

Yes, it's this scene... we are leaving the club with Layla, Elena and Zach and Erynn stops the MC, and we get to chose who do we stay with.
And whomever you don't chose... it's over(on the proposed new version).

From a purely practical standpoint, it feels shitty to leave Layla with drunk Elena and fucking Zach... Even if you already know you are gonna be targeting Erynn for this save, i have to break character to chose her, Erynn's situation isn't urgent, Layla+Elena's clearly is.
Like you said there will be plenty of time to catchup with Erynn, that moment being "a make or break" thing is just bad design imo.

You never met Erynn, from what you have heard at that point she might be bit of a bitch, the other girl is fun, cute, quite nice to you and needs help... everything is saying PICK LAYLA.
