Is there a way to change the game difficulty mid game? If not, can anyone give me a non-modded prisoner mode free-play save file (preferably with high masochism)?

Is there a downloadable file with mods installed? I've run into issues with installing mods for the non steam version. not very use to this kind of stuff.

Likely not. It isn't your average HRPG that runs in a tiny window and barely uses any resources. I couldn't even run it on my 2015 laptop.

I'm not sure, but it looks like the problem is in FastCutIns mods, try to remove it

You really haven't provided any additional info on your problem, rather than shit don't work. But by looking on error message, looks like you cut corners by skipping reading part on how to properly apply mods, and just crudely overwritten your game files.
