yes however you would have to go into one of the three top rooms before starting the fight because in a box in one of them there are 3 potions that heal 1000 health and if you use them in the fight and just keep damaging her you can win.
however you cant fight again after it and there is no content after, so in the demo there is no point in winning that I know of.
chapter 1 is out as of last month, hopefully someone will upload it

It's impossible to beat Sandra at beginning of game (later it's easy but too late) so, later I only can unlock the bad ending.
