Nodoka stuff is taking a somewhat recovering alcoholic and locking them in a wine cellar - or perhaps taking them to a wine tasting championship, or some other event where drinking feels appropriate. He wants to avoid indulging in it, because it hurts others and because he is scared of it for a variety of reasons, but it's also something he knows and knows it feels good, at least partially. So when lead to a temptation and an excuse, yes, he falls for it - but it doesn't mean he wants to have that kind of relationship with everyone, or perhaps even at all if given a choice.
He is also very adverse to advance his relationship with Molly, despite the latter (and the world, seemingly) pushing it. Maybe Akira actually secretly dislikes foreigners?
I bet these are just what the voice lines of each girl sound in Selly’s head rather than an real future plan, though it’d be cool if he makes it happen in any form.

Yeah, when Sekai seemed to jerk him off and some of his blood from his injured hand, got in her hair. However, he was more or less fine throughout his life besides the initial sex stuff which scared him before he became addicted. Had a girlfriend, had schooling, had a career set up. It wasn't until Sekai's death that he turned into a mess and started messing with kids. Not saying his life was perfect, but it wasn't the worst. Some of these girls have it worse.
That Amiokay, might be "Am I Okay", with no relationship to Ami. The other Maya, long Maya, translates to "You Did It", but yeah, a lot of this game could be lost in translation.
Homura is definitely what I'd consider a "Maya", or I suppose it's the other way around. Just give Maya some guns and turn Sensei into a Magical Girl. Makes me wary of where this game will go and just what Maya will do for love.
