Yeah, holy shit, some difficulty it's okay but stamina and food consumtion are just WAY too much.
It's not too bad once you get the hang of it. For example, just doing the tutorial sewer mission should give you way more animal meat than the hunger you expend, and if you're catching the grey mice and roaches, that's food too. In most my playthroughs, I'm basically being sustained by bandits events and cannibalism.
Your main source of stamina depletion will probably be from getting hit. You can't just mindlessly wail on everything. You need to choose or adapt your combat style to minimize it as much as possible, whether that's by sticking to long-range combat, using a shield, or deal insane crit damage by sneaking up on enemies. You'll also have to learn cost management. Some missions and items are not worth getting, and food items should be consumed sparingly if you're near an inn.
If you're traveling between cities, don't be afraid to enter a tile to rest and eat so that you can continue to safely travel. You don't want to get jumped when you're at like 20 stamina. If you have good survival (10+), you can detour into forest tiles for a reliable source of food and free wood to cook it with. You might also want to grab a companion. Having an extra person means you don't get hit as often. Sometimes, they can do all the work and you just have to pick up the loot.
P.S. Avoid being hit from behind. If you must create some distance, don't do it while the enemy is mid-swing.
