So I've been following the guide and I guess it never got updated past day 54, is it pretty straight forward going forward? I've been mostly just doing the main stuff and some side quests, cheated for stats and money.
Yeah, things are reasonably well signposted. Look for the little ! showing new non-repeatable storyline snippets, and make sure you spend time training with Lin.
Is doing the lin training important for main story or only if you want her as a LI?
Only if you want her as an LI, though she has a LOT of content that you'd miss out on. Note that romancing Lin doesn't cut off the two main LIs; Katie won't care, and Emily won't notice. If you completed Lin's story on the Path of Fire (Katie path), it also unlocks a Game+ threesome with her and Katie.

Btw quick question regarding your new game is it gonna be forced LI like Love and magic or we'll have a choice? Tho if it's a harem would it be like love and magic or more traditional where you love them all equally than having one LI that let's you get with others but ultimately you're with the main LI.
Tho I see plenty of redheads, hope I can choose any for ending or love them all the same.

Central LI for story reasons. It's a largely non magical world, though, so less destiny focus than lom
