Buy book about photography in shop, read it, then do the shoots with Emily. Each one you can. Afterwards start talking with roomie, she'll want some shoots to be made with her. Do that. She'll request another, more intimate one which may or may not be needed. But after all these she will say she need a photographer at her workplace, just try talking with her each morning before she goes to work, at dinner, and when she watches TV. She'll bring up the topic after a while.
