I beat part 2 but for some reason one of the side stories does not get unlocked. It just says I need to beat chapter 24. What did I do wrong?
Also, is there anything I could have done to not have Iroha break up with me? Like, I know I did something wrong but not what.

No, and you didn't do anything wrong. Choices/flags for Iroha dictate how your relationship will develop and what it will entail, but her taking a break and trying to navigate through the whole situation is canon and narratively pivotal.
Someone know if anal sex will be added or not ?
There's a flag trigger for it back in chapter 20 during Akemi's scene, so yes, there will be, but the when is something I can't/won't give an answer to.

This is not snarky. I have to say that because tone can't be conveyed in text.
Is there a reason there's no basic controls over the sex scenes, like, to creampie or not to creampie? To BDSM or not to BDSM? There's a ton of games out there that give what I call "player agency" and players appreciate (and pay) for that.
Considering that there's a ton of competition out there for entertainment (all kinds) it may be a good idea to give folks the basic's that so many other AVN's give folks.

Kinks and/or fetishes are heavily tied in with the narrative. Their relationships and preferences develop as they're supposed to, and there will be specificity on what you can do and with whom you can do it with. The flags are being set up, but exploration of certain kinks will be called upon when it fits the plotline, it will majorly happen in Book 4, but that is not to say that there won't be any happening in Book 3.
And as you may have inferred from the reply I gave to the two people before you, there are sexual fascinations that have been hinted at throughout the game but are slowly explored due to the current nature of their relationship and its stability, and for it would be out of character for them at this state of the story. Namely:
And this is not to say that the fetishes won't be possible with the other LIs but the aforementioned are the conduit for each.
I do get your point, and I do try to give an option whenever it's possible, e.g., for Akemi in 20 and a few of Yukine's scenes, but the plot has my hands tied, and I'd rather it happen naturally within their universe than force it for potential $$. I have also been offered before to add pregnancy content in exchange for support, but I declined. It's going to happen, obviously; Rysa's existence pretty much guarantees that, but I want it to happen because it has to.
