I'm not sure this really captures what you were going for but it still came out as a decent pic so I'll share it.
In my pics I'm usually making Nathan brown-haired and Oliver black-haired. The in-game pics aren't 100% consistent but that at least differentiates them. I'll usually try to give Oliver a more aggressive expression too.

I couldn't pull it off as a continuous image, but I think this sort of works as a comic-panel type thing. It is still txt2img, the only inpainting I did was to fix that one of Laura's eyes was green instead of brown. Props to ai_aurora for showing me the comic-panel trick.

I did make my own game with existing photos with Chat Game Maker (by Nightdrop, creator of Hot Dating). It was not too hard to learn. But it doesn't exist anymore :'( So if anyone knows noob-friendly ways to make a phone-game like this, please share!

Godot has a plugin called Dialogic which is for making VN's. I don't know of any "simulate a phone" plugins for it though so you'd probably have to make that from scratch. I think Le Stag uses a "desktop PC simulator" plugin for Unity that he's customized to act like a phone interface. I could be dead wrong on that. I don't know much about Unity.

There is this dude who says he's making a Unity phone sim.
