But sadly most of these games are pretty trivial with difficulty, so you really have to go out of your way to have it happen. I would personally love a hellishly difficult game, where you are most likely to fail. But there is still that tiny hope.

Oh my god, so very much this. I sometimes see folk mockingly ask why you'd want NTR to be avoidable in an NTR game, but this is the exact reason. Knowing it's possible to avoid, trying your legitimate hardest to do so, but watching as in some way or other it comes crumbling down anyways because it's just that difficult to do is hot as hell. Unfortunately, like you say, people rarely try / succeed in striking that balance. (Though I personally tend to appreciate it when games at least try, rather than scene-viewer style games where it feels like you have to 'choose' to let the guy get NTR'd; just make it linear at that point!)

So I remember playing this game that was peak and it wasn't finished. Curious about the name and if it was finished in the meantime.

It was about a couple that adopted a teen that was very quiet and reserved. And the mom kept trying to make him break out of his shell and be more sociable, and eventually noticed he reacted when he saw her showing some skin. And it eventually evolved into them sneaking behind the husband's back, with the mom getting naked "by mistake" in front of him. The pacing was very well done.
