There's two routes, one told from the male MC's perspective and one from the female MC's perspective. Most of the scenes are the same scene, just told from a different perspective, but there is a bit of content which is only in one of the routes (mostly on the female protag's route last time I played...I haven't played this version yet, but I doubt that's changed too much). You can definitely just play the male MC's route, though, and you'll still see like ~90% of the content.

Since this game is about a girl, Female protagonist, why in hell I see male protagonist tag as well? Do we have choose for him as well? Or it just male optional choise?

When you start the game it asks you to choose to play from either Male or Female perspective, you only play as what you choose on that play through

Well, Chapter 5 is definitely nice progress on both storylines and also a visual joy. The dream sequences were a clever way to give us some candy without pushing the story too far within one release. That was good work.

I would have imagined this kind of real life models VN to be faster with releases. If you prepared beforehand a screenplay and got the hang of using the lighting in your set, meeting with your actors once a week should be enough to take plenty of pictures for the scenes.
Maybe the photographer and the actors have weird schedules which complicate things.
For it to be more successful, they have to be more ambitious in the scale of the project and take risks at visiting a few kinks.

I would be shocked if this goes beyond softcore - judging by how stingy they are with showing skin 5 chapters in I'm guessing the "models" are not up for it (or maybe the price is too high for that sort of action)

It's a cool idea to have photo shoots every week)) But it's easier to say. We ourselves would really like to shoot it every week. But don't forget that people don't work for us for free. You need to pay the actors, the photographer, for photo processing, locations, equipment such as lighting ... A good amount is accumulated for one photoshoot. Unfortunately, at this stage, we do not have enough funds and support to hold photosets every week ((
