Hover on your saves with your mouse in the load menu and push the "delete" key of your keyboard.How can i delete all my save so i can start fresh? and not have 200 saves?

Go to
%AppData%\Roaming\RenPy\RedString-1574621830 in the File Explorer, that's where the save files are located.(there's also a copy in game's install directory)
you gotta trash both locations tho, the appdata/roaming/renpy/gamename and actualgamefolder/game/saves
