Has Eva given any indication as to how many chapters the game is going to be in total? Some parts of chapter 9 feel close to end game material, while other parts feel like they are just getting started. Also with development time steadily increasing it seems like this thing could keep going for years unless Eva plans to wrap it up soon.

It is not, as far as I can tell. Eva has mentioned that it could go to 20 chapters or more, which (IMO) might happen if she can figure out how to handle the sprawling storylines.

If I had to bet, I would say the story could be wrapped up in ~2-3 episodes easily. The Book Ian is working on is almost finished, tournament is most likely in next update or so.
The pieces for endings are already there and locking in place, since you can "Lock" relationships with different characters.
If you think about it, her earlier game was not that much longer and I doubt there will be not much room for new characters or major storylines.

I have a feeling Seymour is Lena's biological father, Lena talked about how her real dad left her when she was only 2 during her conversation with Ian in this chapter.

Cherry's scene is the hardest to get this update since you can't fuck either Lena or Allison to get her. Also because it's so far into the story you kinda have to start from the beginning.

Yeah, that does make sense.
I didn't expect her to fit the profile of his mom, but this game has a tendency of allowing Ian and Lena meet people from each other's circle leading to the revelation of some info that causes them to have an argument of some sort. Based on those expectations and the fact that Ian had admitted that his mom is seeing someone else, I expected his mother to be the fashion designer lady.

Ian always meets with Wade, Perry, Jerremy, Cindy, Allison and Emma. Or ok, not all of them but at least 2. They play games, they talk about different stuff and they can help each other out: get a GF for Perry, help Wade with his request regarding Cindy, go with Cindy when she asks you - normal and non-sexual activities. You can also go out with Cherry or Holly and just be friends. Even when he goes to the gym he has another 2 character that he can talk too.
Lena on the other hand has way less friends: a cat, Louise - but you don't spend nearly as much time with her, Holly and Ivy. Stan, he is in the game too, I guess. Maybe he will start to be more important from now on, because Seymour can't buy him and Lena still needs a photographer. Robert can either be a 'bad' sexual partner or a waste of 'ink'. Mike is the same. Axel, well, we've seen this update how he got over the relationship and wants just to stay friends. There is also Ed and Molly, but I see them more like a mother and father / creepy uncle.

She talks about how she's sorry for the situation Ian and Jeremy were in when they had to deal with her stalker earlier. All that while Jeremy is at her place and only seconds away from banging her. Then Ian gets the video of both dudes nailing her and that's it.
I think Alison should have feelings for Ian whether they are dating or not. Those feelings don't just vanish because she has sex with someone. Can they turn into disgust or even hate? Sure. Who in their twenties is mature enough to let go that easily though? It's a possibility that Alison knows what Jeremy does with the videos but no hints were given so far.
