With ED did u buy the Oriental Outfit? If not go buy that & it unlocks 1) a sex scene where u fuck her in the dungeon & 2) a random sex scene where she wants to dom MC in the dungeon. I'm not seeing that. If you look closely her hair style & color are the same. Maybe the bust is different, you might expect some sideboob given her apparent endowment in the earlier picture, but "structured" clothing goes back a looooong time...
That's just because his hair is wet. You're seeing the light reflecting off it which makes it look grayer.

I think it is just the lighting, in the first image the light was bright sun light directly in her face, her shadow directly behind her, but in the second image the light is high and to the right (we are on the shadow side), look at the detail on the bridge

When I asked where all the giants were Tinkerer said they are most common further north so I would assume they may come from the same region as the Northern Tribes (like beyond the Wall in GoT).
