It really is clumsy. Looking through the scripts I don't get why they did half of what they did, it seems needlessly cumbersome for what it actually does. I'd have to disagree about the choices making a difference. So far they really change fuck all. Unless you count changing a disposition, but I don't. It could matter later on but id doesn't now.
The thing is that some choices give a boost to certain character stats, which are not visible to the player, but directly affect the subsequent dialogs
And there are already A LOT of stats
This demo is just a tiny tip of a huge pyramid
That was my point

i mean i get the dev i would love to make a game with everything i love in games but at the same time i'm cognizant enough to know that that is a fools dream because a game of that scope would dwarf AAA games.

If you want to get anything done as a solo dev you need to mind the scope of your project or you will never get anywhere.
