In other previous versions, goblins' skin colour was a mixture of the father's skin and their mother's hair colour, so you could breed red goblins by using slaves with red hair. This is also why some of the older screenshots have white and yellow goblins.
The game has gone through a number of reworks which has removed/replaced a number of features, the first post in this thread has not been updated to remove images showing these removed features and red goblins is one of them.

If memory serves, it was something like breeding a sister with a goblin for a shortstack then breeding that shortstack for a sister then breeding using the sister. It was a process, but it was consistent. It was a glitch all the way back in 0.3.0 or something. If you had that old patch, you could go do it, but as has probably been mentioned, the only thing that changes is the color. It has no real benefits. If I recall correctly, it was a programming error that caused an overflow somewhere.
