The only thing I will respond to is that yes, at least 1 route where Rachel uses the helmet on Zach is planned.
As for anything related to Dr. Valarie, well folks I'll be saving that for my SubscribeStar page However the Demo does reveal that one of the planned patients is a male.

The hat is just going to point out that any language other than English is not officially supported...
...because the hat cannot speak any of those languages.
The hat also cannot speak English, for it lacks vocal cords. However it's flattered that someone took the time to translate its work.
It is not explained how the hat programs this visual novel.

So I guess I'm confused from the synopsis, is brainwashing the mistress to dominate you a thing you can do? I read it over and just assumed if she goes by mistress red then it probably means she's the dom, so is that the 'hero' path where you just let her be what she wants?

I'm not sure if there's a "brainwash her to dominate you" route (yet) because I haven't done any of the sub routes, but there is at least one route where you don't brainwash her and let her dominate you. As well as routes where you brainwash her to dominate other people for you, and a variety of other routes.
She goes by Mistress Red because she's a dom in her porn persona, but the reason the protagonist (initially) wants to brainwash her is because he loves the idea of taking a dominant woman and turning her into his slave. But things get more complicated once he actually meets her and has to decide what he really wants.

And for those so inclined there are a couple good sub routes, and yes, a Brainwashed Domme route is planned.

To access these new scenes in 0.60D, select the brainwashed path, and take one of the villainous roures (Either ignore Zach's dream, or acknowledge the dream, embrace the villainy, but leave Natalie alone)
