Not sure about the latter, but yes - there are a few futa on male scene. One with Tyshtira (your companion), one with Clawyn (your another companion), a few with golden elves and, I think, one in the recently added quest (as per versions 6.6-6.7).
The scene with Tyshtira is easy to come by just by developing your relationships with her - comes naturally, really. At some point she'll go to your room in the Castle an ask to "return the favor", you agree and get the scene. And its a good scene.
On the other hand, the scene with Clawyn is trickier. First, she is by far the hardest to get companion - you must recieve latter from her in specific location, follow it, do her quest or two, then if you have high enough morality, she'll join you with her sister. Second, developing relationships with her takes a lot of time and purposeful effort, so unlocking that futa on male scene isn't too easy. Though the scene is forth it - she's a dog furry, wink-wink.
Scenes with golden elves are rewards for progressing their quests and comes easy. I think, at some point later in game you'll somehow get an invitation to visit them. Quests are few and very simple, around 4 or 5 of them (or those 4 or 5 stages of single quest? doesn't matter!). Each of them grants you futa-on male scenes (around 4 in total, the 2nd or 3rd is really good), which was the whole focus of that section of the game.
The recent scene I didn't see, so I have no idea how to open it. I think, it just comes naturally through the recent quest progression.
Also, this game has a few more male on futa scenes. Some with Tyshtira and Clawyn, some with random characters, though I struggle to recall specific details of those scenes. And a few more futa on female if you choose Female Playable Character. Sadly, I didn't play as FemPC for a long time, so I have little idea as to what those scenes are and how to unlock them.

Oh I always thought it would unlock a place to visit at the castle map. The income goes up with time spent on the game or through fast travel?
Pretty sure its as time spent but still tho, when is the gallery gonna get updated/fixed?

It's generated every time you travel between the main locations. So the latter. There's a upper limit of 3500 though.
Nope, the time passed plays a role at very rare occasions in RA (like pregnancies).
Supposedly in the next update. You need a lot of faith.

Is there an up to date guide for the 6.7 version? A couple of the PDFs I've found online seem to be a few versions old.

how to improve the castle defense aside from the building? Also what are those valor points for?

You can rescue a Minotaur named Nadesha in Laroavia that will give you a defense boost after a bit, a Drake will appear in the Lake area of the Castle Map that will give you a defense boost if you let him stay, and you can get another defense boost from the Abyss Challenge on the Second Floor.
The Valor Gems are to unlock gear and extra classes in the Conference Room.

After you do either Aid for Ornesse or Aid for Novos you'll get guards for the Castle and representatives from the cities for said guards. Talk to your rep of choice and tell them you want their soldiers to guard the Castle. You'll get a boost to your defense score the first time you do it.
You can also talk to the butler in the Throne Room and hire Felicia the Warrior. You can find her in the Storage Room and she'll train your guards to boost your defense score as well once you have them.
