I feel like something has to happen with the cook and waitress. Considering there's actions with them and repercussions. Fingers crossed. Phone -> Contact -> Main -> Change Alias
This lets you change the default, name, official name, alias, full name and occupation. It's not great and often times overwrites one change with the original name when you change something else.

Okay, so I have read about this, but I can't seem to get the action. I've done everything with the sisters
