The remade events only tell things a bit differently. It's just a cosmetic change meant to offer a better playing and narrative experience to new players, adjusting characters' tone or focusing on more important bits that may have gone unnoticed in the original scene. No variables are modified - and given the game's structure, those event01 type of variables are only used to trigger the next event, so if you already passed that point of the story it wouldn't affect your playthrough even if the dev modified them.
