The stance based combat can be a bit confusing at first but you'll get used to it if you keep at it. If not then your next best option is to grind up a few levels, because once your stats are pumped up you'll be able to pummel opponents easily and ignore the stances for the most part.

Is there anyway to make a viable sex build to maximise the "fun" time?
They just made the new DK date encounter in story mode

A lot of the old content breaks new continuity, character developments and future implementation of features, so they will be expanding on stuff towards the release. You'll probably see a lot of Story Mode Re-Writes in future too.
Same, is it like other dates and is tied to losing/bottoming first to unlock it?
I wish the game made Perception more useful in combat by having high scores show you what counters the opponents next move. (Block, Evade & Parry) Would massively reduce the trial and error of combat against enemies using unique moves.
As dated and clunky as they are, make sure to read the Help menu, the opening tutorial and re-activate the tips option to see info about moves you're using for the first time.

Are you in Adventure Mode or Story Mode? It's currently only in Story Mode.

Well, besides getting someone that's a Patron to ask, I have no ideas until someone posts a guide. You could possibly try reading the Script to see if that gives you any clues.

Ive played it.
You need to pass the gates, and instead of going "to beyond" od whatever tile, you have 3 connected that to West. Thats where you gonna be able to go on a date with her
