Sariel, most likely not until her husband has been avenged if ever.
Mirielle probably around the return after this next adventure is the feeling I'm getting from her. That's just pure speculation.
The others we would have no way of knowing unless Vander confirms something or gets shown in the story. Talea has shown a SLIGHT interest during the bath scene (that could just be shock of seeing the MC's member) when we returned to Wildale but I believe that's it.

MC is kinda engaged to get engaged to Miri the seamstress.

Maybe main character (MC) Henri can make amends with Gertrud (since the queen was under control of a demon) and he can breed her... the queen can get another bodyguard meantime.

like that racoon girl that i thought was a shape shifted dragon retaining her tail.

Oh, come on: she was also voyeur (despite under demon control) and I suspect showed interest other times. Didn't other characters comment on her looking at him? She hired him as the only breeder. I think she does like MC Henri. You're right on the vengeance but I don't think 'if ever': I'm thinking maybe definite endgame love interest (LI) or near.

Some are interesting like pixies, maybe cow-/minotaur-girls; even Winter princess if she could go against mother and respect rather than manipulate/oppress MC Henri. If I'd be interested in a 'furry' girl (which I'm generally not and thought Vander said wouldn't be love interests (LI)) then instead of such rodent/rat (kind of icky) if there really has to be such monster girls, I'd be interested in cat or wolf girls, or elves with other skin colour (green, not drow)... but not as interesting as some other fantasy creatures, like I particularly like the fairies (high magic ones of season planes) since they have pointed ears but don't lack pubic hair, and angels/heralds.

as for alt girls:
i do think at least one off the minotaur girls might become a LI currently im thinking Felicia(the clan chieftan),probably just a concubine though.
Our winter princess Sarrasa will have to learn she won't have the final decision but considering that "beloved" bond she most likely end up with the MC somehow.
its already heavily suggested the pixi girls would try to get with the MC.
for green skinned elfish the closest idea that comes to my mind is "dryad" but considering they have already been shown i don't think that's what you wanted from it.
outside any albino like mutation i doubt we'll see a green skinned LI,biggest change for that would probably go orc or goblin.

they were changed into that...
it wouldn't be impossible that there is a "lost" tribe hiding somewhere in a cornor off their world who escaped the enslavement from the demons,
aside from that a few might've resisted the enslavement and ended up refugee's or slaves ,their are multiple ways to bring one into the story.
