Would she have accepted MC's surrender? And it's not not like she had any motive beyond that of a simple mugging anyway. She just wanted the sword.
No one surrendered. If we're talking about Finn, I would have lost respect if she'd cried uncle. It was partially her utter defiance even in defeat that made me like her initially. Also, it's not about what she does, or would have done, just about what I would do.

"Give back what was stolen from the Alfar and be the Heroine of them" you mean ? not very honorable motives if you ask me.

There’s a crucial difference between killing someone in immediate self-defense and choosing to execute a disarmed person simply because they might pose a threat in the future.

Killing her after disarming her isn’t moral, it's just punitive.
Honestly only reason I didn't kill her is because I was a guest in an Elven city. If it was natural ground I 100% would have killed her as I wouldn't trust she wouldn't try again when im not expecting it. As how I see it one way to make sure an enemy doesn't do anything is to kill them and for me she was labeled as an enemy at that point.

I also took into consideration the reason MC went there in the first place. Yeah killing her may be justified in a duel, but by doing so you'll lose your chance to do what you went there to do. Well it turned to shit at the end anyway, but you still have at least some elves that consider you a friend I'd say. If you kill her, you're an active target.

I largely agree, but it must also be said that the death of one of the two was presented as an absolute requirement.

Personally I saw it as counterproductive since MC was on a "peace mission"

Every time I replayed the game, I killed her, it was satisfying, after all the crap she threw at a person whose world was too small two days ago.
But I rewind back, for a proper playthrough)

That is true if the peace mission was on Neutral ground I would of not killed her as well too cause it would make no sense. I kind forgot about the peace mission part of it when I said I would kill her if it was on neutral ground.

It seems odd to me that there isn't more discussion about how or if Sayo will be punished for stabbing Finnabair in the back! I would also think Kaija fans would be pointing out that she promises to help MC get justice for Finn whether you let her continue as a LI or just a friend...

Even on neutral ground I wouldn't kill someone who was disarmed and pinned. I also wouldn't stab someone in the back. (Another reason that I never would have worked out as a Templar.)

And another interesting question, how exactly does our dear and adorably cold and icy sweetheart know about Kaija's surname?

At this point I think it's more shocking that Kaija uses the Templars as a back door to Valhalla.

For me if she is labeled as a enemy I don't care if it dishonorable or whatever especially one that tried to kill me twice. I wouldn't trust an hostile and aggressive enemy to try again it's either them or me , i'm not giving them another chance. The Peace Mission would of been the only thing that saved her life if it was on neutral ground and in the Elven city being surrounded by Elfs and the peace mission is what saved her.

On my path nothing happens. When MC gets back he talks to Jessica about it, and she is going to try to find out what happened but weeks go by and it doesn't come up again. Then, just before Jess decides to go party in Neverwhere, there is a moment on the balcony when MC remembers Finn but that's it. He basically comes back and does nothing.
