I'm pretty sure someone asked this question on the discord, and the answer was that if you didn't complete a seasonal mission and then advanced you would be locked out of completing it.

Is it possible to complete it in the future when it's spring again? And if not, Do I miss something important by not finishing the quest?

We should be expecting a year 2 with update 1.1 (we are currently awaiting update 0.8 to enter open beta). I'm not part of the dev team so I can't say whether it would be possible to complete it in year 2 but I highly doubt it. As far as I know you gain some additional story content with Laura and you might gain some love and trust points. In my opinion it's worth going back to replay but if you're not in it for the character interactions your opinion may vary.

As much as I like the character interactions, I don't have the energy to restart the game from the beginning if the only thing I am missing is a bit of dialogue and a couple of points, Maybe one day once the game is finished I will think about starting a new save.

Correct. Before moving on in the story, the next update will be to add in gameplay and systems that will be used throughout the game.
