I don't fully understand what u want (since after saving settings it remains enabled at UAGC start until u do settings reset) but I'm just planning to enable it by default in next version.

I tried to decrypt the audio file of https://f95zone.to/threads/saria-reclaimed-v0-14-2-velminth.114058/.
There are in .Ogg_ and i can't figure out how i can obtain a proper mp3 (or similar) file.
Can someone give me a hand ? Thx

Hm, never seen on this engine games that has any videos. It's using ancient theora codec. Maybe will add video support in Wolf RPG compressor in next UAGC version.

UAGC v2.5.7 (install it on UAGC version 2.5.5 or 2.5.6):
For QSP (Old) compressor added QSP+Awesomium support (now also detected in AGED tool), ultrafast ffmpeg, donor feature for gifs and video. Actually looks like QSP old version supports only animated gifs (not any videos) so I've removed VP9 encoder and added VP8 instead (for Awesomium engine) that supports only mentioned video codec, both engines don't supports webp as far as I know. QSP (New) renamed to QQSP because it's real name of that engine, nothing more changed for it, reminding that it supports webp, H264 and VP9 (VP8 too) formats.
For Wolf RPG compressor added ogv video support that is using in that game (it also has 2 very small about 100Kb gifs but it doesn't worth my efforts to add gif compression for this). Because of ancient Theora codec even at 3000kb/s bitrate compressed videos would look quite bad.

Not sure if my issue or something else, I no longer get the pause/status screen, pops up then instantly closes, still does the compression and gives the results and all that at the end.

Try this or exit/open UAGC again. Also check that Windows Defender not blocking pause.exe but I don't think that's ur problem coz it wouldn't opened at all I think.

That worked, just never has happened to me before, it would bring up the screen for a split second and close, but UAGC would still compress/build and complete fine...but that did the trick.

Can u make sure that those avi files used by game for real and not just to make it looks bigger or devs mistake coz proper location for RPGM MV is "movies" folder?

Non latin fix now implemented for images and audio. Maybe will add video too. Btw why u posted 3 games, they all have non-latin video?

Try v2.5.8 and make sure that u done this "Open with WinRar > Options > Name encoding > "(ANSI/OEM)Japanese". Extract it." when unpacking game as said in OP.
