In the current version there's three now. Dealer the Witch, your sister Alice, and the merchant Herba. Though Dealer doesn't show up in the current version except for the intro.
Thats UTW Beginnings. UTW Gothic is a separate standalone game

Though I didn't mention it I was referring to the currently released versions. Gothic isn't out yet so I don't think it's fair to include them for now.

The current version also include the Dealer, because you can switch between episode I and Episode II.
