Do I have to plan a save per LI, or not? Will the game force me to choose only one as my "official girlfriend" at some point? Or is this the type of game where the MC is with all the LIs, and at the end he will have to choose?

So far, there's only one pair you can follow who will result in a breaking - that's Roxy and Natalie (who doesn't have an official path anyway). Natalie will make you break it off if you are "seeing" both of them. Other than that, fucking Ivy as a party prize can get you thrown off a path or two (definitely Ashley) even though it was just a one-off.

The most recent update suggests that a full (or nearly full) harem will be possible going forwards now. I have been playing this as one of my regular games and I only have a single save that I'm actively continuing, until such a point as I find an LI "choice" that needs to be made.

I think this game has at least 10 love interests, Sasha is there to cover a specific kink and is well integrated into the story.

I don't think she's annoying, she's a secondary character that appears once every 3 or 4 updates and you can always turn her down and go for one of the other LIs.

You can even just accept the first two or three encounters with Sasha, which are more "light", and then, once she has fulfilled her deal, end on good terms with her rather than delving deeper into her content .

Not the entire thing, no. Some earlier scenes have been reworked in terms of dialogue, renders, new events etc. Check the changelog in the OP for details.

I know "event" means "scene" rather than specifically "lewd scene", but "1 extended event with Carol and Yuki" still manages to give me hope for that one variable triggered so long ago. Hopefully that will get into the main game at some point and not just the extended scenes.
