I think it's more like the creator of the video sends her a script with a couple of lines and she just records them, then the video creator just cuts it to fit the video

It can be either way really. Big Johnson for example, scripts the entire scene for the episodes he’s been doing. The actors give their performances, and he animates around that.

It's always animation first and then sound, not just in this 3D videos stuff. BJ doing it that way is irrevelant.

Eevee, for sure. But you need a 4000 series RTX graphics card for the best result.
