I'm gonna try to write a simple walthrough which trainers to fight after we collected all the mushrooms after the 1st Leo Fight:

This guy right before the path towards City Road:

After both these easy fights, you should have a lvl 20 Cap
We can continue fighting some more trainers inside Big City, both have 2x lvl 15 mons.
One is a male officer near the first guy we beat, the other is a man sitting on a bench near the south exit towards Cave Road.

Then we fight the guy sitting on the bench before the big Department Store who has a lvl 16 and a lvl 18 mons.

This puts the cap at lvl 23.

From here, you can optionally start the Teahouse event on Beach Road.
This leads to another easy fight, but you can also save this for later until you beat Maki if you want to see a small Easter Egg of a slightly altered quote from her. (1 lvl difference is very small).

Beat the Monk (lvl 20) and the Nun (lvl 21) on Holy Road.

Then look around for trainers inside the Gym, City Road, Beach Road, Harbor town, the Ranch and any previous trainer we skipped that are now within your lvl. to beat.
Eventually you start to snowball and reach a cap of lvl 40-50+ as you start clearing every trainer in those areas.

Then after the Central Event where you meet Athena, there are some trainers to beat in your home town (a girl in front of your house and a ninja in the topright corner) and the cave that leads to Wano Village and you can keep snowballing until you are strong enough to beat Star Trainers.

2. Is there any other overpowered early game mons you'd recommend I catch for future battles?

I would still like some recommendations for mons to capture for my early game, mid game and end game parties.
I Highly recommend Kurotorofu/Shadoom. It evolves from Shadial, who you can catch on Cave Road at lvl 30ish.

It's a tank with Body Regen that heals 50%. Perfect Guard stalls for cooldown (later for DoT)
And just outtank enemies. Black Hole prevents enemies from boosting their stats.

It's main weakness is that it's weak to DoT, but that's where Chikepu is great against, since Chikepu is immune to all abnormal status including the ones with DoT.

After you beat the Dark Gym leader, All your Dark mons learn Lamenting Spite, including Shadoom.
This makes it even easier to beat enemies, since it puts many DoT debuffs, including Curse which prevents them from healing.


There are two useful legendaries out of three legendary mons you can catch at lvl 50 in the midgame:
Soliche (red fire mon) and Moostar (Light)

Soliche unique personality skill "Solar Radiation" immediate puts Blaze on the enemy, which deals DoT and lowers defense 25% making it very easy to one shot. It's a very aggressive mon that can easily go 2 for 1 against enemies.

Soliche is a great mon to start off a fight if you don't know what you go up against, you can switch to a better matchup, while Soliche still applied the Blaze debuff on the enemy and then later to apply it on another mon when Soliche enters the battle again.

Moostar got nerfed, but it's still one of the best Non DLC2 mons (who are all postgame).

It's personality skill Beguiling Light deals 33% fixed dmg if they miss (old effect was 50% which 2 shots everything that misses twice, this is the nerfed version)

Moostar is a snowball mon, keep boosting it's evasion with Zen Mind and defense with Aura Enhancement. It will eventually dodge most hits and easily tank the ones that do land with it's boosted defense and high hp.
If you have enough time to setup it's boosts, it can solo all 3 enemy mons by itself as they have no way to dent a boosted Moostar.

It's main weakness is either DoT when it has no way to heal or enemies with Personality skills that prevent boosting stats. Shadoom completely Hard counters Moostar, since it resets all buffs and then apply DoT and outstall Moostar.
