Liam may eventually find out, but it probably won't be until the novel's end if L&P ends getting that far. On the other hand, Dylan is slotted for Cuckold/NTR, as you can find it in the point system and a couple of choices throughout the novel. Some of these choices are The pool scene (swimming lesson), Trampoline, Mall event, etc.

I would like no more than Liam to be the primary source Cuckold/NTR path, but that's not how L&P wrote the story as the points show, and just like the swim lesson, It would make sense that Dylan catch them from a distance for points.

No, no cuckold points for Liam. Sophia only has to believe for a few seconds that Liam had caught her with Sam. So far, many have assumed that a call from Liam would interrupt the scene, so no one accepted Liam would now collect cuckold points.
In order for Dylan Cuckold to collect points he would have to see what Sophia and Sam are doing and I think this step would be too big for Dylan at the moment. In addition, it would make a possible romantic route for Sophia / Dylan quite difficult if Dylan now becomes jealous of Sam again and reacts like a spoiled little boy.
But, I admit, my reasoning is just as conclusive and inconclusive as your reasoning is to me.

The previous day, playable day 11. Doing the Ellie event, she specifically mentions she thinks it unfair Juls got to play with her boobs and not her. And Ellie did, during the morning update of this playable day.

Since I don't particularly know the difference either, unfortunately no. It doesn't tend to come up in the games I play. From what I've noticed, it's one of those things where everyone has their own understanding of what it is anyway.

So by this definition Aiden's tasks could be considered NTR (especially since Liam is kept unaware), but cuckolding would be something more like Dylan getting off on watching Sophia and Liam (or someone else) fuck?

What makes you think he won't step in or see it from his window? If what is being speculated is to be true about Dylan seeing Sopha/Sam from the window from the house, providing that you have enough Cuckold/NTR points and Sophia/Sam part is active, will L&P give you the choice of either have Dylan stay silent from and watch from a distance, or go down an interrupt them? That has been happening throughout the Cuckold/NTR choices with other scenes. In a realistic setting, people have walked in on or seen things from afar, putting them in an awarded moment. I'm sure it has happened to you a couple of times throughout your life. Also, Liam doesn't receive Cuckold/NTR points because it's not written into the novel. Now maybe down the road, L&P may change this thought.

L&P has said that he wrote Dylan's Cuckold/NTR because he wanted Dylan to have a "watching" fetish. And even though L&P removed "The Twist" from the novel, I'm sure certain elements are still in the novel. One example is Dylan wanted Sophia to feel sexy again. I think this is one of the reasons he wants to watch, so he can see it. To me, that should have gone to Liam on the Filthy Side.

Aiden's 4th - 1st Solution/Continue Blackmail until the 2nd Solution
Don Morello - Possibly help with Aiden if this storyline is active with the casino debt.

Noon:
1st/2nd Side Job - I think this remains because L&P likes both stories
Dylan/Ellie - It appears this option could be tied into the evening event, and a choice may have to be made with either picking Sophia, Ellie, or Emma

Afternoon:
Sophia/Sam - LI route, One of the Main Plots of the Novel
Sophia/Claire/Marie (with Dylan) - Sophia or Dylan has a connection with Marie. Also, this may be a choice that the reader will choose that Sophia/Marie will move on with Dylan.

Evening: I think this one speaks for itself - Main LI route here.
